Israel is a small country in the Middle East. The country has a diverse climate with snowy mountains in the north and the hot desert in the south. Jordan, Syria, and the Palestinian Authority all border Israel to the east. Lebanon serves as the northern border and Egypt borders in the south.

ISRAEL GENERAL INFO
Israel is located at the eastern end of the Mediterranean Sea.
Israel is bordered by Lebanon, Syria, Jordan and Egypt. To the west it is bordered by the Mediterraen sea.
More than half of the population lives on the narrow coastal plain near the Mediterranean Sea to the west. The Dead Sea between Israel and Jordan is the lowest point on the Earth's surface at 1,365 feet (416 meters) below sea level. The water is so salty and rich in mineral deposits that no plants and animals can survive there. The water is warm year round.
In the south and east land is hot and dry. The Negev Desert in southern Israel receives only 1 inch (32 mm) of rain a year.

Jerusalem
Jerusalem is a sacred city for Christians, Jews and Muslims. It’s a pretty special place to visit even if you’re not religious. Historically this city has been fought over hundreds of times and its modern inhabitants are so rich a mix of people that any city wanting to call itself a ‘melting pot’ would be envious.
Tel Aviv
Tel Aviv has 14 stunning kilometres of the Mediterranean beach and sea to enjoy. The magnificent White City was designated a UNESCO World Heritage site in 2003, but all around it are bustling markets and Bauhaus architecture.
EATING IN ISRAEL
Wherever you go in Israel, you are sure to come across streets and markets filled with Israel’s best foods. In a region renowned for fantastic street food, local vendors and hole-in-the-wall eateries, you’ll be served up national favorites like hummus, falafel, shawarma, and shakshuka.
Here are my top choices of food to try when in Israel.
Hummus
Hummus is one of the most affordable dishes to try in Israel. While in many countries it may be dip or condiment, in Israel it is a whole meal. It is served hot with whole chickpeas, a drizzle of olive oil, and a sprinkling of paprika. Scoop it out with some warm pita bread or eat it with a fork.
Sharwarma
Shawarma means ‘turning’ in Arabic and refers to the actual process the meat is cooked. There are many shawarma stands on nearly every street in Israel. Cuts of meat or a mix of meats (lamb, turkey, beef, chicken) are stacked onto the shawarma roasting skewer and cooked low and slow. Servings are shaved off to order and served in a pita or a laffa.
Falafel
Falafel is made from ground chickpeas which are deep-fried into yummy crispy balls. A falafel sandwich stuffed with chopped salad, hummus, tahini, pickles, and amba sauce is a perfect dish to try in Israel.
Shakshuka
Shakshuka is a breakfast staple in Israel. It is poached eggs served in a pan of steaming hot, rich tomato, chili, and garlic sauce. The dish is then served with an Israeli salad, tahini, and a piece of bread for ultimate dipping purposes.
